The December holiday is my favourite, I just love Christmas, Summer and the festive food and mood. The last thing I want to do is get stuck in the kitchen making complicated lunches. School day lunches are very easy, a packed sandwich, a salami stick, nuts and a fresh fruit keep my daughter happy at break time, but the holiday calls for something less lunch boxy. In the latest Nadia magazine [Dec/Jan2017] , I photographed easy lunch ideas using left overs, the mini shellfish fritters were definitely a hit and so easy to fry on the beach using your portable bbq. You can make the Thai beef salad at home, just add your dressing [last minute], a smile and sunblock. Happy holidays!
