Pie is my favourite. Chicken leek, braised beef, rhubarb and apple and lemon meringue pie – so I was especially excited to shoot a pie feature for Nadia magazine.[June /July 2018] I do make my own pastry when I can, but a good store bought pastry can be my best friend when I’m rushed for time. Nadia Lim made THE best beer-braised beef and cheese pie I have ever tasted! Her lemon and vanilla custard pie/tart was the perfect ‘sweet but not too sweet’ treat with a cup of tea. This is why I love my job – some days I get to eat pie all day long [and photograph them]. We shot in a cool old caravan, I so badly want one to restore and then explore New Zealand with! When I was a kid, we were that ‘caravan holiday family’, happy memories. So when I’m asked, what is your favourite food? – Pies, especially in Winter.
