Chestnut season in New Zealand is March until May. I found these organic Johnny Moo chestnuts at my grocer and decided to roast them and celebrate Autumn. It could not be easier, cut a slit in the shell, soak them in hot water for a few minutes, toss in melted butter, maple syrup and smoked salt and roast in a 200deg C oven for 35 min. Then the tricky part,- shelling them. It takes a little effort but is so worth it. [Unlike when I shelled 4 cups of chickpeas, have you ever? But that was the best falafel.] There is a lot you can do with the nut, but we just enjoyed them like that! I love to eat seasonally and chestnuts and Autumn are a perfect fit. I used 1 kg nuts, 1/2 cup melted butter , 2 Tbsp Maple syrup and 2 Tbsp smoked sea salt.
